- 120g Bagged Rocket
- 1 Avocodo, thinly sliced
- 1/2 cup Walnutes, toasted
- 1/2 Red onion, thinly sliced
- Dressing: 1/3 cup extra virgin olive oil
- Dressing: 2 tbsp lemon
- Dressing: 1 tbsp wholgrain mustard
- Salt and Pepper to season
- Add all the dressing ingredients to a jar, screw on the lid and shake to combine the mixture. If you don’t have a jar, whisk together in a bowl.
- Layer the rocket; avocado, walnuts and red onion in a large bowl then drizzle with dressing. Serve along side the grilled protein of your choice!
